Enchilada Bake



Ingredients
1 lb ground beef
1 medium red or white red onion chopped
1 can green chilies
1 can black beans ( substitute pinto or kidney beans if desired). Drained and rinsed.
Medium Salsa ( or any style or flavored salsa you desire)
1 pkg taco seasoning
Sour Cream
Shredded Cheese
Desired size or Tortilla
Preparation:
Preheat oven to 375. In a skillet brown meat and chopped onion. Add green chilies, black beans, salsa, and taco seasoning.
Spray 9x13 inch baking dish and layer with 2 or 1 tortillas depending on how big tortilla it is. Spoon in Mixture put some sour cream and cheese and repeat layers. Until meat mixture is used up or until you have desired layers. Save leftover meat mixture for tacos or nachos.
Cover with foil and bake for 30 minutes; remove foil and bake additional 5 minutes or until cheese is melted.
Serves: 4
You can also add frozen corn to meat mixture for added color and enjoyment. This is a fun recipe you can use many different ways. Have fun experimenting. Substitute ground beef for ground turkey.
