2 cups cooked chicken-shredded
1/4 cup chopped onion
1/2 tsp garlic powder
1/2 tsp chili powder
8 flour tortillas
shredded cheese

Combine chicken, onions, garlic powder and chili powder and stir until mixed. Spoon mixture in center of large tortilla and sprinkle with cheese. Fold in ends and roll. Pour oil 1 inch deep in large skillet and heat to 375 degrees or until a cube of bread with turn brown in 40 seconds. Carefully place filled tortillas in oil. Fry until golden brown and crisp. Turn with tongs and fry other side. Drain on paper towels. Serve on shredded lettuce. Top with guacamole, sour cream, and salsa.
**For a healthier version arrange on a baking stone and bake at 350 degrees for 20 minutes.
Guacamole:
2 large ripe avocados
1 Tablespoon lemon juice
1/3 cup salsa
Cut avocado in half and remove pit. Carefully peel off skin. Mash with a fork. Add lemon juice and salsa and stir with a fork until smooth.

Chocolate Carmel Delights

1 1/2 c flour
1 1/2 c old fashion oats
1/4 t salt
1/2 t baking soda
1 1/2 c firmly packed brown sugar
1 1/8 c melted butter
14 oz bag Kraft caramels
1/2 c whipping cream
12 oz bag of milk chocolate chips
In a large bowl combine the first 6 ingredients to make mix. Melt caramels and whipping cream in a saucepan over low heat. Sprinkle 1/2 of mix into 9 x 13 ungreased pan. Bake at 350 degrees for 10-15 minutes. Sprinkle chocolate chips over baked mixture and top with melted caramel mixture; sprinkle remaining mix on tip. Bake at 350 degrees for another 15 minutes.

1 pkg. (6 oz) Stove Top Chicken Stuffing
2 lb. ground beef
1 1/4 cups water
2 eggs, lightly beaten
2 cloves garlic, minced
1/3 cup grated parmesan cheese
Preheat oven to 400 degrees. Place all ingredients in large bowl; mix until well blended. Shape into 24 meatballs, using about 1/4 cup of the meat mixture for each meatball. Place in single layer on foil lined baking pans. Bake for 20 minutes or until cooked through.

4 small boneless, skinless chicken breasts
1 tablespoon EVOO
6 sprigs fresh thyme, leaves removed from stems and chopped
4 slices speck or any smoky ham of your choice, thinly sliced
Preparation:
Season chicken breasts with salt, pepper and fresh thyme then wrap each breast in a piece of ham Heat 1 tablespoon EVOO in a large saute pan over medium-high heat. Cook ham wrapped chicken breasts until crisp and cooked through, about 6 minutes per side.
12-15 minutes total.
Serves: 4
If desired serve with mashed potatoes and gravy and a baked acorn squash season with butter salt and pepper or butter and brown sugar, baked at 375 for about an hour or until tender upside down in dish with about 1 inch water in bottom of pan or a nice cold salad.

1 can black beans ( substitute pinto or kidney beans if desired). Drained and rinsed.
Medium Salsa ( or any style or flavored salsa you desire)
1 pkg taco seasoning
Sour Cream
Shredded Cheese
Desired size or Tortilla
Preparation:

15 ½ oz can red kidney beans, undrained
1 envelope Hidden Valley Ranch Dressing mix
1 envelope dry taco seasoning
1 small onion, chopped

2 bunches fresh broccoli (1lb.) cut in small flowerets
1 medium purple onion, finely chopped
1 cup grated cheddar cheese
6 strips bacon, cooked until crisp and crumbled
½ cup sunflower seeds or raisins (optional)
Preparation:
In a large bowl combine broccoli, onion and cheese. Refrigerate. Just before serving, stir in bacon. Add sunflower seeds or raisins if you wish. Pour desired amount of dressing over salad. Stir to coat. Serve the same day.
Salad Dressing Ingredients:
1cup mayonnaise (miracle whip)
2 tablespoons red or white wine vinegar
½ cup sugar
½ teaspoon salt
Preparation:
Mix ingredients. Chill at least one hour before tossing with salad
Serves 6-8
I add spinach, and use the Real bacon bits from the store. You can substitute cheddar cheese for any type of cheese of your choosing, I have used crumbled feta before. And toasted Pine nuts is also a good substitution if you would like a little different flavor. Also in place of the raisins use craisins. Experiment with this recipe and enjoy it.

In a crock pot place chicken in the broth. Cook for a few hours. Then add potatoes, and carrots. Add seasonings to taste. After it is done cooking add cornstarch and water and shake in a cup to make a white thin substance. Then place in liquid and stir to thicken a little bit.
Biscuit Mixture
2 cups flour
1 T baking powder
2 t sugar
1/4 t salt
1/2 t cream of tarter
1/2 c butter
3/4 c milk
Mix dry ingredients together. Then add butter with a pastry blender until it is course crumbs. Make a well in the center and add milk all at once. Using a fork, stir until blended.
To make this recipe even healthier use 1 cup whole wheat flour and 1 cup white flour
Place the crock pot mixture in a 9 x 13 pan. Then sprinkle peas on chicken mixture. Then top with biscuit mixture. I like to drop little bits of dough all over, but you can do it however you like.
Bake at 450 degrees for 15 minutes.
